Join us on Wednesday, May 29th, as we celebrate spring and the return of pleasant weather with our “Spring Has Sprung” Chef’s Wine Dinner. The Dancing Marlin culinary team, led by Chef Matt & Sous Chef Vince, will tantalize your palate with five incredible courses, paired with five fantastic wines. Our “Constellation” wine representative will be on hand to discuss these great wines, including their origins, grapes, winemaker & much more. Bring your questions and bring your appetite for a great culinary event!
First Course: Laura Chenel goat cheese, frisee, arugula, rose braised beets, champagne & tarragon vinaigrette, dehydrated strawberries. Wine Pairing: Band of Roses
Second Course: Hokkaido Bay scallop sashimi, pistachio crumbles, blood orange foam. Wine Pairing: Kim Crawford Sauvignon Blanc
Third Course: 12 hour braised short ribs, cornbread & jalapeno polenta, braising reduction, pickled scallions. Wine Pairing: Thorne Merlot
Fourth Course: Fettuccini pasta, fresh clams, house smoke bacon, carbonara sauce. Wine Pairing: Saldo Zinfandel
Dessert: Triple chocolate mousse, layered fresh berries, yuzu whipped cream. Wine Pairing: Cooper & Thief Red
